Masala peanuts
Raw peanuts coated in a gram & rice flour mixture, garlic, spices and deep-fried in oil.
Tips
- Add just enough water (sprinkle) while coating peanuts with the mixture.
- Always fry in medium heat. At high heat, peanuts turn brown and won’t taste nice.
Ingredients
Raw peanuts — 1 cup
Gram flour — 8 tbsp
Rice flour — 2 tbsp
Red chilli powder — 2 tsp
Garam masala — ¼ tsp
Fennel seeds — 1 tsp
Garlic — 3 cloves, crushed
Curry leaves — 1 sprig, chopped
Asafoetida — ¼ tsp
Salt
Oil, for deep-frying
Directions
Take peanuts in a bowl and add all ingredients except oil — gram flour, rice flour, red chilli powder, garam masala, fennel seeds, garlic, asafoetida, curry leaves and salt.
Mix well and sprinkle water to coat peanuts with the mixture. If done correctly, peanuts will not stick to each other, very much.
Heat oil in a pan for deep-frying. Ensure it is set on medium heat
Add a handful of coated peanuts and fry till golden brown (see photo for reference). They will harden once kept aside for an hour or so.
Continue frying the remaining peanuts.
